A calorie deficit means you take in less energy than you use, so your body makes up the difference from itself. That sentence is true and almost useless on its own, because every hard part hides in the words “less than you use”.

Energy does not disappear. If less comes in than goes out, the shortfall comes from what your body has stored: mostly fat, and some muscle if the deficit is steep or protein is low. That holds whatever the food was. Bread, rice, chicken, ice cream: the bookkeeping does not care.
One thing follows from that which people miss. A deficit is a relationship between two numbers, not a property of a meal. No food puts you in a deficit, and no food takes you out of one on its own.
Neither number is known precisely.
That last one explains why a deficit that worked for six weeks can stop working while you changed nothing you can see. So when the arithmetic and the scale disagree, doubt the arithmetic first. Energy balance is not wrong, but your two estimates of it can be.
On any given morning, body weight is mostly water. Glycogen, the stored carbohydrate in your muscles and liver, holds water with it, so yesterday’s dinner shows up on today’s scale without a gram of fat having changed. Salt, sleep, the menstrual cycle, a hard session and a late toilet visit all move the number by more than a day of fat loss does.
I have over a thousand morning weigh-ins in my own data, and the swings between two consecutive days are routinely larger than a whole week of real change. The practical rule that came out of that:

Anything faster than three weeks and you are reacting to water.
A steeper deficit takes weight off quicker. That is the whole of the case for it. Against it: more of the loss is muscle instead of fat, training quality drops, the adaptive slowdown above arrives sooner, and the plan gets harder to keep at the exact moment keeping it is all that matters.

It is not a moral state, and you are not “in” or “out” of it for good. It is an average over time. One large meal does not undo a week, any more than one light day makes one.
It is also not a health plan. A deficit says nothing about whether you eat enough protein to keep muscle, enough fibre to be comfortable, or enough of anything else. Those are separate questions, and the calorie number does not answer them.

Most often water, and second most often intake that drifted up unnoticed. Compare weekly averages before you change anything: two flat weekly averages mean something, two flat mornings do not.
Not over time. But you can be in a deficit on paper and not in reality, and from the outside those look identical. That is the usual explanation when careful logging and a stalled scale disagree for more than three weeks.
